Let's make some chocolate-hazelnut cream filled donuts!


Hello, hello! It has been a while. But, I am glad to be back
I've been busy moving forward in my life. I finished school and found a job
Also, I took some time perfecting this recipe and I think it's at its peak now! Let's eat well and deliciously savouring all of the bites.


Ingredients!

Yeast mixture:

Dry yeast, 6g

Sugar, 2g

Milk 150g

Dough:

Yeast mixture

One egg

Sugar, 24g

Wheat flour, 200g

Salt, 2g

Butter, 28g

Wheat flour, 110g

Sugar, 100g

Cinnamon, 2g

Chocolate-hazelnut cream

Dark chocolate, 100g

Milk chocolate, 50g

Hazelnuts, 100g

Sugar, 30g

Brown sugar, 10g

Cocoa powder, 10g

Coffee creamer, 150g

Butter, 20g



Let's begin!

It's important to prepare the yeast mixture well, if you overheat it, the yeast ends up dying
SLIGHTLY heat up your milk, warm enough for you to put your finger in calmly, then add your yeast and sugar. Place your mixture somewhere warm.

Let it rest for 30 minutes! And...

...in a big bowl, mix 200g of wheat flour, 2g of salt and 24g of sugar.

Chocolate-hazelnut cream time

Firstly, roast your hazelnuts, I like to do it in an oven bag, baking them at 170C until the skin looks dark brown, but you can also roast them in a pan!
Just don't burn them! Though the burnt skin's smell might trick you, but that's why we're roasting the nuts - to get rid of the skin c:
When the hazelnuts bake in the oven, try shaking the bag and getting rid of the skin that way; same goes for the pan roasted ones - shake shake shake!
Melt your chocolates with butter
Add all ingredients to a blender, blend that baby up, I like to do it for around 10 seconds at a time and taking out the cup and shake it up manually, since the cream is thick, then I continue to blend it and just repeat the process until the cream is one texture.

Back to the dough!

Add an egg and the yeast mixture into the bowl of flour and mix well with a spatula, pour in melted butter.
Cover with plastic wrap or a wet towel and let it rise for 30 minutes.

Afterwards!

Mix in the rest of the flour (110 grams), it should become a kneadable dough, if not, try adding a few grams of flour a time, start kneading for around 5 minutes, so the dough is smooth.
Sprinkle flour everywhere: on where you'll roll and on the dough itself.
Roll out the dough, so it's around 1,5 centimeters thick, take a glass as big as you want your donuts to be (mine were 6 centimeters wide)
Take some baking paper and cut it into squares that are much bigger than your donuts, this is for when we fry the donuts in oil, they just slide off the paper.
Place each donut on a piece of paper and let it rise for 20 minutes. I like to let it rise in an oven at 40C.

FRYING TIME!!!!!!!

Turn on the heat and let the oil heat up, try sticking a long wooden toothpick, if it bubbles up, it's ready!
Take your donut on the baking paper square and gently let it into the oil and try moving it slightly to get the paper off.
Flip the donut, when one side turns golden :)
Remove the donut from the pan onto a plate with a tissue on top to soak in the excess oil.
When you're done with the donuts, most of them should have cooled down.


Mix 100g of sugar with 2g of cinnamon in a bowl and rub the donuts into the sugar, so the sugar sticks c:
Let the donuts cool entirely before filling them with the choco-hazelnut cream!


Filling time!

Fill your piping bag with your choco-hazelnut cream! Here's a trip I recommend using:



I experimented with two kinds of filling ways: horizontally and vertically!
Horizontal: way more cream in the donut, so it becomes much sweeter;
Vertical: cream is in the middle, not so sweet, but can feel slightly dry.

Make the best choice for your sweet tooth!

Eat well! Here's a ~secret filling~ you can also try to make, since you reached the very end c;


hehe I love experimenting, so here's a caramel filling, that's really simple to make! Here are the ingredients:

Caramel filling:

Caramelized condensed milk, half a can, around 150g

Coffee creamer, 25g


Let's make it!

Put the caramelized condensed milk in a bigger bowl and stir in a teaspoon of coffee creamer at a time. That's all LOL!!!
